If heaven exists, I imagine that they serve this Baked Goat Cheese Dip there on a regular basis.
Remember the Goat Cheese Risotto that I posted last week? When I went out on Friday night to do my grocery shopping for the weekend’s blog cooking (my Friday nights are typically pretty exhilarating like that), I saw that Costco’s goat cheese was SUPER cheap. 2 of the long logs are cheaper there than just 1 log at any other store. I had NO idea what I’d do with that much goat cheese but it felt like I was wasting money (and goat cheese!!) by not buying it.
That’s where this dip comes in. I simply needed a way to reasonably use up all that goat cheese. Little did I know that this dip would be one of the best things I’d put in my mouth, ever!
It’s TOTALLY indulgent and definitely something that should only be consumed on special occasions (because I imagine the calories in this are…high) :D. But, it’s an indulgence that I HIGHLY recommend you partake in very soon!
It’s also, coincidentally, very easy to make! Combine all of your ingredients in a food processor or blender…
And blend until everything is combined and you’ve got a nice, creamy, and smooth consistency. Then just place it in an oven safe dish and bake for about 10 minutes. You want the cheese to get nice and melty with a bit of brown beginning to form around the edges.
I topped my dip with a bit of olive oil although that’s totally not necessary.
I discovered halfway through eating this that it’s even better, which seems impossible, if you drizzle each bite with a bit of honey. I’m not 100% sure what possessed me to try this but OMG IT’S SO GOOD!!
